About Platemise

Who we are

Platemise is an independent software publisher. We are building a recipe and menu costing workspace for independent restaurants, caterers and bakeries with staff. The name comes from the plate and from mise en place: everything in its place before service.

This site, platemise.com, publishes the costing guides behind that software. Food-cost formulas are easy to find; what is harder is seeing a real recipe costed line by line, with yields, so you know which lines drive the cost.

What we publish

  • Dish costing guides, each with its own sample recipe and numbers.
  • Ingredient yield guides: as-purchased versus edible portion, trim and cooking loss.
  • Food-cost guides by type of operation, such as pizzerias, cafés, food trucks and caterers.
  • Pillar guides on the food-cost formula, menu pricing, recipe costing templates and sub-recipes.

How we cost each sample dish

  1. A stated recipe per portion. Every guide lists its sample recipe with quantities, so you can compare it with yours.
  2. Dated, sourced prices. Each ingredient price carries the month we took it and its source. We never invent a cost, and we never present a sample’s cost as what you will pay.
  3. Yields from public data. Where a yield matters, we take it from USDA sources such as the Food Buying Guide where they cover the item, and mark any other figure as an estimate.
  4. Prices at several targets. We show the menu price at 25%, 30% and 35% food cost, before sales tax, so you can read off your own target.
  5. The lines that matter. Each guide names the two or three ingredients that drive the cost, and the yield traps that make a portion cost more than it looks.
  6. One question per page. We do not publish near-identical dish pages that only swap a name. Each page has its own recipe, numbers and explanation.
  7. We correct mistakes. If you spot an error, email contact@platemise.com.

What we are not

  • We give no legal, tax or food-safety advice, and we do not cover nutrition, calorie or allergen labeling. For those, see FDA, USDA FSIS and your state or local health department.
  • Platemise is not affiliated with any food distributor, supplier or point-of-sale company, or with USDA or FDA. We do not use their logos or describe anyone as a partner.
  • When we compare software, we quote rivals’ published prices with the date we checked them and a link.
